Diana Inez Hansen, age 65, passed away peacefully at her home with family on Thursday, June 15, 2023.
Diana was born on January 21, 1958, in King City, California to Gloria and Jackson Cole. She was the middle child of 11 in her family. She attended high school in Greenfield, California. She started working at the local Greenfield Meat Locker during high school where she learned all about meat and started a life-time career as a butcher. After the Meat Locker, Diana worked at the local grocery store, Nob Hill, and became the first female butcher.
Diana fell in love with and married Larry Hansen and they eloped in Tahoe in 1987. They welcomed their first child, Russell, in January 1988. Jillian joined the family in August 1990. Soon after, they moved their family from California to Lakeview, Oregon.
Diana and Larry opened and operated the Outback Butcher Shop together on Cottonwood Road. Diana’s favorite thing to process was wild game. She was a great butcher who took pride in her work and her signature mark was the green wrapping tape.
Diana enjoyed golfing, hunting, swimming, the beach, community races, cooking, morning walks, whipped cream in her coffee, her family, her friends, big glasses of wine, and a good party!
Diana was diagnosed with metastatic breast cancer in 2015. The diagnosis didn’t change her, as she always prioritized living in the present. Her focus stayed on her kids, husband, siblings, friends, and work. She enjoyed the life she had and did not fear the ultimate that comes for all of us. After 9 years of treatments, it came down to the brutal truth that her body could no longer carry on.
Diana will be remembered in this community not for dying of cancer, but for how bravely she lived her life as fully and lovingly as possible in the face of a painful, terminal disease.
Diana is survived by her husband, Larry Hansen, and her two children: Russell Hansen, of Geraldton, Australia, and Jillian Jackson of Boise, Idaho. She is survived by her granddaughter, Claire Hansen. She is also survived by her 9 brothers and sisters.
A heartfelt thank you to the Sky Lakes Cancer Treatment Center, the Lake Health Hospice Team of Kathie, Krista, and Hanna, as well as Dr. Gallagher’s team who all provided excellent care.
A Rosary will be held on June 29th at 6:30 PM at St. Patrick’s Catholic Church. A Funeral Mass will be held on Friday, June 30th at 11:00 am at the Catholic Church. A lunch reception and potluck will follow at the Elk’s - meat to be provided. Relatives and friends are welcome.
